Apricot Bars

This is another recipe passed on by my friend Darla. She recommends it as the perfect colorful compliment to heavier cookies. After reading over the recipe, I'm excited to try these! (And when I do, I'll add a photo so you can see the yummy goodness.)

Ingredients:
3/4 cup butter (1 1/2 sticks), softened
1 cup sugar
1 egg
1/2 tsp vanilla
2 c flour
1/4 tsp baking powder
1 1/3 cups flaked coconut
1/2 cup chopped walnut
12 oz jar apricot preserves (Darla uses low-sugar so it's not so sweet)

Directions:
Cream butter sugar, add egg and vanilla, mix well.
Combine flour and baking powder, gradually add dry ingredients to the wet ingredients.
Add coconut and walnuts, mix thoroughly. It will be a little crumbly.

Press 2/3 of dough into 9x13 pan, spread with apricots.
Crumble remaining dough over apricots.

Bake at 350 for 30-35 minutes until golden brown.
